Victoria Sponge

I made a great victoria sponge for high tea. It rose well, cooked evenly and did not colapse. I was very pleased.
The cheese straws were also excelent. Unfortunatly I just made up the recipe and cannot recall the exact quanties I
used. Think it was 8oz cheese, 8oz s/r flour, 2tsp mustard powder, some fat (about 2oz?, grapeseed oil?) and to
bind a shot of mushroom ketchup and water.
