Quorn Sausage Casserole
15 quorn sausages (apple version) cut in half, they had packs of 5 at only £1 so I stocked up
packed of mixed diced butternut squash and sweet potato
diced fried onion
tin of cherry tomatoes in tomato juice
carton of tomato passata
sprinkle of pepper
sprinkle of no-salt season all
Bake lid on at 160C for 2 to 2 1/2 hours.
I was going to serve it with potatoes but we shopped for too long so Toby and I had a think and he suggested buying some frozen giant yorkshire puddings to serve it in as they would be quick.
Worked ok, but Kate had hers on the side as she does not like soggy yorkshires. I served it with cooked mushrooms and sugar snap peas.
For dessert we had a mix of things, fresh mango cubes, toasted wheat and fruit bread with butter and lemon curd, and my own take on syllabub. This was specially for Toby made with condensed milk.
Toby's Special Syllabub
1 tin condensed milk
3 lemons juiced
1 glass dry white wine
I blended the lemon juice with the condensed milk in the hand blender. Then drizzled in the wine a bit at a time while blending more.
We decided it was not syllabub but it all got eaten. I liked it, and so did Toby.
